Saika Ginjo Akazu is an exceptional Japanese red vinegar that brings a depth and flavor to cooking that cannot be achieved with regular vinegar. It is produced using a traditional method that requires time, patience, and precision: the brewery's sake lees are aged for over three years, and then undergo rigorous fermentation and further aging for over 120 days in large wooden vats.

The result is a vinegar with a smooth texture, rounded acidity, deep color, and delicate rice and sake flavors. It not only adds acidity but also enhances flavors, deepens sauces, and gives dishes an elegant umami layer. It is especially suitable for making sushi rice, Japanese sauces, pickles, marinades for fish, tofu, and vegetables, as well as for use in Chinese dishes, stir-fries, Western sauces, and for delicately seasoning cold dishes.

Tips
For making sushi rice according to the manufacturer's recommendation: for every 180 grams of dry rice, add 25 ml of red vinegar and a teaspoon of salt.
If you prefer sweeter sushi, you can add up to a teaspoon of sugar for every 25 ml of vinegar.
Also suitable for a dipping sauce with soy, ginger, green onion, and a little sesame oil.
Try incorporating it into marinades for fish, tofu, mushrooms, roasted vegetables, or chicken.
A small amount can be added at the end of cooking to stir-fries, sauces, or salads to deepen and freshen the flavor.
