Himokawa Udon Noodles, 200g · Hoshino Bussan

Himokawa udon are wide noodles from the Gunma region of Japan, with an impressive flat appearance and a particularly pleasant texture – smooth, agreeable, slightly chewy, and excellent at absorbing sauces. Unlike thicker, rounder udon, here the experience is of a wide noodle that feels almost like a Japanese "noodle sheet," and therefore adds both flavor and a beautiful presence to the dish in the bowl.

They can be served hot in a dashi, soy, and mirin broth, cooked with vegetables and mushrooms, incorporated into a thick sauce, or served cold with a Japanese dipping sauce, scallions, sesame, and ginger. This is a great item for those who already know udon and want to take a small step up in their Japanese culinary journey at home.

Tips
Cook in plenty of boiling water and stir gently to prevent the wide noodles from sticking together. For cold serving, rinse thoroughly with cold water after cooking and serve with a dipping sauce based on soy, mirin, and dashi. For hot serving, transfer directly to a delicate broth with mushrooms, scallions, and tofu, or combine with stir-fried vegetables and a thick sauce that coats the wide noodles.
