Kombu is one of the foundational ingredients of Japanese cuisine. Soaked or gently heated in water, it releases a deep, oceanic, and delicate flavor from which good dashi begins – the broth behind miso soup, ramen, udon, soba, and many Japanese sauces and stews.
It's not a product with a loud flavor, but one that builds the right background for a dish. A few pieces of kombu in water, a little patience, and the dish gains a layer of clean umami that feels more Japanese, more balanced, and fuller.
Tips
To prepare basic dashi, soak kombu in cold water for 20-30 minutes or gently heat and remove before it comes to a full boil to prevent bitterness. It can be combined with bonito flakes for a classic broth, or used alone for a vegetarian version. It also works wonderfully in ramen broth, miso soup, cooked vegetables, rice, noodles, and delicate sauces.
