Shinshu Inaka Soba Noodles, 340g · Hoshino Bussan

Hoshino's Shinshu Inaka Soba noodles bring the more rustic and deeper side of the Japanese soba world to your bowl. Unlike regular wheat noodles, these offer a nuttier, more subtle flavor, with a slightly rough texture that helps sauces or broths cling well to the noodles.

They can be served hot in a dashi broth with soy sauce, mirin, and green onions, or cold after rinsing in cold water, alongside a Japanese dipping sauce. They pair wonderfully with vegetable tempura, nori seaweed, sesame seeds, mushrooms, tofu, soft-boiled egg, or cold vegetables, and make for a simple, precise, and very pleasant Japanese meal.

Tips
Cook for 4-5 minutes in plenty of boiling water, then rinse thoroughly with cold water to stop the cooking and maintain a good texture. For cold serving, arrange on a plate or zaru mat and serve with dipping sauce, green onions, and ginger. For hot serving, add the cooked noodles to a hot broth just before serving, to prevent them from becoming too soft.
