Yuzu Kosho, 80g · S&B

This isn't just another hot sauce, but a concentrated seasoning that gives a dish a very distinct signature. The yuzu brings an aromatic and clean sourness, and the chili adds a dry and direct spiciness, so a small amount is enough to completely change the direction of the plate. It works wonderfully with raw fish, sashimi, sushi, noodles, rice, soups, tofu, and roasted vegetables, but can also be excellent outside of Japanese cuisine – for example, in a chicken marinade, a salad dressing, or over roasted vegetables. This is an 80-gram jar, not kosher, and a product of Japan.

Tips
It's best to start with just half a teaspoon and mix it into the sauce or sprinkle it over the dish just before serving. Also excellent for mixing with mayonnaise, soy sauce, sesame oil, or softened butter – to create a spread or sauce with depth, spiciness, and a very unique citrusy freshness.
