יש רטבי סויה שמוסיפים רק מליחות, ויש כאלה שבונים למנה את הבסיס. רוטב הסויה Kura Zukuri של Yamaki Jozo שייך לצד השני: סויה יפנית כהה, עמוקה ומבושלת, עם טעם עגול שמתאים במיוחד למנות חמות ולבישול ביתי בסגנון יפני.
