אקזו הוא חומץ יפני אדום עם אופי שונה מחומץ אורז רגיל. במקום חמיצות חדה ובהירה, הוא מביא טעם עגול יותר, מעט עמוק, עם ניחוח עדין של סאקה מיושן וצבע ענברי שמוסיף לאורז ולרטבים נוכחות שקטה ומדויקת.
החומץ הזה מתאים במיוחד להכנת אורז סושי בסגנון אדו, שבו רוצים פחות מתיקות ויותר עומק. הוא עובד נהדר גם ברוטב לסלט מלפפונים, כבישה מהירה של ירקות, רוטב לטטאקי, מרינדה עדינה לדג, או נגיעה קטנה בקערת אורז עם דגים, אצות או ירקות.
זה לא חומץ “כללי” שמכניסים בלי לחשוב. זה מוצר קטן ומדויק למי שרוצה לקחת את המטבח היפני בבית עוד שלב קדימה.
