Kombu is one of the fundamental building blocks of Japanese cuisine, and for good reason. It's a dried seaweed with a deep yet not aggressive flavor, capable of elevating an entire pot from just a small piece. It's excellent for making dashi, stocks, miso soups, cooking legumes, rice, and dishes where you want to build a rounder and more precise layer of flavor without overloading on spices. It's a small product, but one that gives the feeling of much more thoughtful and professional cooking.
Tips
Soak or gently heat in water to make stock, but don't boil too vigorously to maintain a clean and pleasant taste. After using it for stock, you can also slice the seaweed and incorporate it into a stew, salad, or stir-fry instead of discarding it.
